The selection of the fruits is the first big step in the manufactoring process of a brandy of quality. Metté distilling has renewed for several years their fidelity with the same suppliers in order to make sure of the excellent quality of the fruits. The fruits are delivered in modest amounts in order not to damage them, then they are sorted and put out of tank of fermentation or maceration at the hand to avoid the use of the pump which would wound the fruit. After maceration only one distillation will be carried out to which one eliminates head and tail not to keep that the heart of heating (70°) which will be tiny room to 45° with water. After distillation, the eau-de-vie are put out of tank stainless. They age there between 6 and 8 years before marketing.
