A party wine par excellence, Champagne takes on a more complex reality. Because despite the unique name "Champagne", there are a very large number of different champagnes. Thus Champagne can be "blanc de Blancs" (from Chardonnay), "blanc de Noirs" (from Pinot Noir, Pinot Meunier or both), from a blend of three grape varieties, from a single raw or several, white or rosé, vintage or not, and with varying proportions. In addition, the Champagne region constitutes the demarcated area of three AOCs: Champagne, Coteaux-Champenois and Rosé-des-Riceys. On either side of the Marne, Reims and Épernay share the role of capital of Champagne. Several regions make up the Champagne appellation: the Montagne de Reims, the Côte des Blancs at the gates of Épernay, the Grande Vallée de la Marne and the two banks of the Vallée de la Marne, extended by the Aisne vineyard and the Surmelin valley. Finally, the Aube vineyard is located in the extreme south-east of the appellation area and separated from other sectors by a 75 km zone free of vines.
