White sparkling: Champagne Drappier 2017 (75cl) — Expressive nose of white blossoms, ripe citrus, pear and candied lemon peel, layered with warm brioche and roasted hazelnut. On the palate: delicate, refined bubbles, creamy texture, chalky freshness, long finish with citrus zest, almond and a subtle spicy note. An exceptional, gastronomic vintage with beautiful structure.
Pairing/Service: ideal with oysters, tuna sashimi, shellfish risotto, farmhouse chicken with cream, dishes with truffle. Serve at 8-10 °C. You may gently decant 10-15 min in a wide carafe for full aromatic expression at the table.
