Zacapa 23 rum is produced using an aging process based on the "sistema solera" technique in which rums of different age and profile are assembled and then aged in a succession of casks. The first barrels were used to preserve robust American whiskeys, the second with delicate sherry and the last of elegant Pedro Ximenez wines. In the end, the resulting liquid is a unique blend of rums from 6 to 23 years of age. The complex solera aging process creates intriguing interludes of honey, caramel, spicy oak and dried fruit flavors in this rum.

Estate and wine: Zacapa is the capital of the department of the same name, in Guatemala, from which comes this "ron" of Hispanic tradition. Owners of a sugarcane plantation located 350m above sea level, Ron Zacapa's producers use only concentrated cane juice to make it a special "honey". With the help of yeasts extracted from pineapple, the must is fermented gently before being distilled in a still with a single column of copper. The rum produced is then aged in cellars at 2300m altitude. The original and top-of-the-range cuvée, Zacapa 23, is aged in a barrel of American bourbon, Spanish sherry and European wine.

Eye: Opaque caramel brown.
Nose: A soft start that envelops the complexity of the glass; sweet aromas of caramel, vanilla, cocoa and hard caramel, combined with thicknesses of flavors indicative of solar aging of different barrels; notes of caramelized cherries, Brazil nuts and toasted hazelnuts with the fine hint of a toffee, bananas.
Palate: Wonderful, generous and full-bodied complex with a sweet density of honey, typical of an aged spirit. A great depth of aromas of grapes and dried apricots adjoining a tasty and intense note of oak, nutmeg, leather and tobacco. We also have in this 23 year old Solera Zacapa Rum, delicate notes of coffee and vanilla. The balance between a spicy touch of cinnamon and ginger on a pleasant finish on the palate.
