Pressing then rest of the musts in vats for settling. Fermentation following the Champagne method. Assembly then foam (or 2nd fermentation). Aging on slats or on lees. Rimming and dosing.

About the producer
Barbe-Nicole Clicquot, nicknamed the "Great Lady of Champagne", born Ponsardin was a businesswoman and the first woman to run a champagne house. Born December 16, 1777 in Reims. She was 27 years old when her husband, François Clicquot, died. He left her a champagne house created 33 years earlier in 1772 and producing 100,000 bottles annually. Nicknamed "The Widow Clicquot" or "The Great Lady of Champagne", endowed with an unusual strength of character, she was able to run her business and at her death on July 29, 1866, the house marketed 750,000 bottles through the world. She had the intelligence to acquire vines among the best wines, at Bouzy, Verzy and Verzenay in the Montagne de Reims, thus constituting the exceptional heritage of the house of 286 hectares. She also designed the famous yellow label which, all over the world, can recognize at a glance a bottle of Clicquot.
