Beaune Clos Des Mouches Premier Cru 2011- Joseph Drouhin (75cl)

Red wine :

The name comes from the fact that this sunny enclosure housed beehives, and the bees were formerly called "honey flies". This is one of the first vineyards acquired by Maurice Drouhin (the son of the founder) during the 1920s. With great determination, he managed to buy 41 different plots from 8 different owners. The Clos des Mouches is planted in red and white, in equal parts, it gives one of the mythical wines of the House. From 10,000 to 12,500 plants per hectare planted to explore in depth the intimacy of terroirs and reduce production by grape variety. Adherence to former base performance, currently the current allowable return of less than 20%. Manual harvesting in small boxes pierced to preserve the integrity of the fruit. 2 to 3 weeks of maceration and vinification in total. Aging in barrels of which 20% new cask for a period of 14 to 18 months.
